- 2 lbs ground beef
- 1 chopped onion
- 2 garlic cloves, minced
- 1 chopped green pepper
- 1 (16 ounce) can tomatoes
- 1 (16 ounce) can whole corn
- 1 (16 ounce) can black olives
- 1 tablespoon chili powder
- 1 teaspoon salt
- 1 teaspoon pepper
- 1⁄2 cup cornmeal
- 2 cups milk
- 2 tablespoons butter
- 1 cup cornmeal
directions
- Preheat oven to 375 degrees.
- Fry hamburger and drain.
- Add the onions, green pepper and garlic; cook until onions are golden.
- Add tomatoes, corn,olives, salt and pepper, and chili powder; stir and add corn meal.
- Pour this all in a 13x9-inch pan.
- In a sauce pan pour in 2 cups milk, 1 teaspoon salt, 2 tablespoons butter and 1 cup of corn meal.
- Stir until thick (it thickens fast).
- Pour mixture on top of the hamburger mixture. If you desire, sprinkle cheddar cheese on top.
- Bake until golden, about 45 minutes to 1 hour.

Yumalicious! Leaves so many variations to your imagination should you choose to venture... Made the meat mixture to our preference. Sauteed onions and garlic, chipotle and other seasonings to bring out a TexMex flavor profile, adding homemade black beans, kidneys, fire roasted tomatoes and green chilis, both then diced, 1/2 pkg Lawrys Taco Seasoning and a handful of sweet corn. MY sweet cornbread recipe on top and the cheese atop the finished clrnbread topping. Baked til melted abd edges brown and crispy. BAM! HAMERCY! "Couldn't buy this deliciousness anywhere"! "Amazing"! say my guests... Cool home cook moment. My Son placed an egg over easy on top the next morning to a warmed up wedge of this...To Die For! :)

Good basis recipe for what’s on hand. I used stew meat instead of burger. Green olives instead of black. Cream corn instead of whole. Ignore the mysterious “cup of water”. Cook the topping while stirring. Pretty mild, but just the way my wife likes it. Add more chili if you want. This could be a good vegetarian dish. Leave out the meat and add a can of black beans.

For those who are asking when to add the water, it is added to the 2 cups of milk for the corn meal topping. Topping is the right consistency when it looks thick enough to sit on top of the meat mixture and not runny. I also added grated cheese before baking. This is an ok basic recipe but rather bland so I also used Rotel canned tomatoes and a can of Ortega diced Chilis, added Cumin and an extra Tablespoon of Chili Powder. Drizzled Red Enchilada sauce on top and also topped with a dollop of Sour Cream.

This recipe is just like my grandma used to make. She always served it with a baked potato, and its no-frills goodness still makes my mouth water. I find myself making lots of substitutions, i.e. ground turkey breast instead of hamburger, olive oil instead of butter and skim milk instead of whole, but the flavors stand up really well to all the "low-sat-fat" changes. I suspect I'll be making it for Cinco de Mayo!
