Stacy's Favorite Vegetable Beef Soup

- 1 1⁄2 lbs beef stew meat, cut into bite-sized pieces
- 1 tablespoon vegetable oil
- 3 cups beef broth
- 3 cups v 8 vegetable juice
- 3 cups water
- 1⁄2 cup red wine
- 1 onion, finely chopped
- 1 stalk celery, chopped
- 2 carrots, peeled and sliced
- 2 russet potatoes, peeled and cubed
- 1 teaspoon minced garlic
- 2 cups cabbage, chopped
- 1 (14 ounce) can corn, drained
- 1 (14 ounce) can cut green beans, drained
- 1 (14 ounce) can diced tomatoes with juice
- 1 (16 ounce) package frozen mixed vegetables
- 2 beef bouillon cubes
- 2 teaspoons dried basil
- 1 teaspoon dried oregano
- 1 1⁄2 teaspoons salt
- 1⁄2 teaspoon pepper
- 1 bay leaf
directions
- Heat vegetable oil in a large stew pot. Add the stew meat and thoroughly brown on all sides. Add red wine and deglaze pot, stirring in all the brown bits on the bottom until the wine is reduced by at least 1/2. Add the chopped onion and minced garlic and saute for about 5 minutes longer.
- Dump in all the other ingredients and stir well.
- Bring to almost a boil, then cover and reduce the heat to a simmer. Let simmer (almost bubbling), covered with the lid slightly ajar, 1 hour, stirring occasionally, until all vegetables are tender.
- Add more salt and pepper to taste, if desired, and discard the bay leaf.

Stacy, You are now one of the brightest stars in the sky --- and your recipes continue to gather lots of stars here on Zaar. When I make veggie soup, I always print off your recipe -- it's amazing. I improvise but its always your basic recipe I start with. Today I added some bok choy, zucchini, squash, sweet potato, and a package of Fordhook lima beans -- in addition to the veggies you list. I doubled all the "liquid" and spice parts of the recipe -- and probably added a bit more water. Now my freezer is plum full of yummy soup. RIP -- and thoughts and prayers to your family. So many of us here are glad that our paths crossed.

This soup was just terrific. I added all fresh veggies that I had in the frig.: onions, shredded carrots, 3 ears of corn, green beans, yellow squash, zucchini, and potatoes. The addition of the wine to the meat along with spices was the secret. Could not believe it. This will be my veggie soup from now on.

Wonderful Recipe! It is especially good when prepared in a cast iron dutch oven at 325 degrees-after browning the meat on the stovetop with the onions, garlic and celery. I love how this is so jam packed with veggies-both in the V8 juice and in the frozen and fresh ones. If you have the meat cut into a smaller dice, it finishes cooking in 1 1/2 hours and thickens to a stew like consistency in the cast iron.

I've been looking for a great beef vegetable soup, and this is it! I used leftover cooked pot roast for the beef, tomato juice instead of V8, and one potato and one turnip instead of 2 potatoes. I also left out the bag of frozen veggies. I also added more liquid and salt. It was delicious and everyone loved it! Going into the Favorites file, this will be my go-to recipe!

I just made this today and it is so easy and yummy. I made some changes to reduce the sodium content. I used low sodium beef broth and V-8 juice. I also used fresh corn cut off the cob and fresh green beens intead of canned. I always use rutebegas instead of potatoes in soups & stews for better flavor and texture. I used baby limas, okra and peas instead of a bag of mixed veggies as I already had the corn and green beans. I added 1/2 tsp thyme and sea salt instead of regular salt. I also cut the beef stew into tiny pieces instead of the large chunks you get at the store. I will make this soup over and over. It's too good.

My name is Stacy, and I'm a single Mom who works full-time with 4 kids ranging from ages 9 to 21, a brand new granddaughter named Faith, and a cat named Pubert (we call him Pube) who is also my kid... Even though I don't have my parents anymore, their presence is always felt and their love has resonated in my life, even after all this time. You'll find a lot of my posted recipes that refer to "Jolean" --- and that's my Mom. :) I sure do miss her...
I love music, especially 70's music, cats, incense & lavalights, candles, and I love to play guitar. I've been called an old "hippie chick," and I don't mind that label in the least. I also love to try other people's recipes and find ones that remind me of my Mother, and those precious memories that I had growing up in a household with such a wonderfully comforting cook...I work full-time in a real estate office as an office administrator.
I came to this site looking for recipes that were tried and true. I stayed at this site because I found people who were kind, loving, caring and shared the same interest that I do --- food and cooking. I've saved a lifetime of recipes and learned so much about cooking and ingredients that I actually feel proud of my cooking. I bet my Mom looks down on me with pride every time I cook a new recipe from RecipeZaar, and I bet my Dad cracks up every time he sees me photographing what I've cooked! My daughters have actually gotten into the act, too, and are quite versed in searching for recipes and answers here on Zaar. Makes me proud to be their Mom.
RecipeZaar isn't just a "website." It's a lifestyle. And some of the friends I've made here are LIFELONG friends to me --- and in my estimation, those types of people are a rare thing to find in this world. :)
