Spicy Shrimp and Chicken Pasta (Like Carino's)

- 2 (8 ounce) boneless skinless chicken breasts, grilled
- 3 tablespoons butter
- 20 medium raw shrimp, peeled, tail removed, and cleaned
- 1 cup fresh button mushroom, cleaned and sliced
- 1 cup sun-dried tomato, sliced
- salt and pepper, to taste
- 3 cups heavy cream
- 1⁄2 cup romano cheese, grated
- 1 1⁄2 teaspoons cayenne pepper
- 16 ounces dry penne pasta
directions
- Season and grill the chicken breasts until done. Cool and slice into bite sized pieces.
- Add butter to a large sauté pan on medium heat.
- Once butter is melted, add the shrimp, sliced chicken, mushrooms, sun-dried tomatoes, salt and pepper.
- Saute mixture until shrimp and mushrooms are cooked.
- Add the cream, Romano cheese and cayenne pepper. Let cream reduce by half while stirring frequently.
- Meanwhile, cook pasta al dente according to package directions; drain excess water.
- Toss cooked pasta with contents of sauté pan. Serve.

I loved it and so did my roomies. Read comments and took it all in. Here is what I did different. I live in California and we tend to eat spicy so I added a Serrano chili thinly sliced thrown in with the butter. Did everything the same till serving. Someone recommended green onion, excellent idea and I had home grown tomatoes which I put on top. Excellent! Someone else said it did not heat up very well the next day.... Just zap it for one minute stir then one more minute and perfection. I too aded more shrimp and a little less chicken. Make it to your taste you will love it. PS: I always shave my own cheese, that way you know what you are getting. Ciao!

I grew up in Tucson but moved to Colorado in 1989 and live in a household with my husband, Dad, daughter and 3-year old twin granddaughters. Our 8-year old grandson spends 2 nights a week with us. All of that adds up to often difficult menu ideas to met everyone's tastes.
Zaar is very addicting and I love trying the recipes I find here. I like to find recipes of people that I see are still active on Zaar and love it when I hear back from the Chef after I review the recipe. Everytime someone reviews one of my recipes, I like to find one of theirs to make and review as quickly as possible. It's a way for me to find great chefs I don't know yet too!
My husband has high blood sugar so we try to watch our carbs, but it is not easy because we love them so much!
I was diagnosed with brain tumors in 2005 and so far have had 5 surgeries that have left my eyelid droopy. I hope to have a surgery that will correct that soon!! There is still one tumor they have not removed but my wonderful doctor James Garrity at the Mayo Clinic in Rochester MN says they will leave it alone until or if it ever causes problems!
