  • Preheat oven to 425 degrees F.
  • Halve all of the avocados and remove pits.
  • Place avocados on a baking sheet and fill the holes with strips of smoked salmon. Crack an egg into each hole, making sure the yolk remains intact. If all of the egg white doesn't fit into the hole, leave some out.
  • Top each egg with salt and fresh black pepper.
  • Bake eggs for 15 minutes or until whites are set.
  • Garnish with red chili flakes and fresh dill.
  • Serve with toast.

  1. I am a big fan of guacamole, and avocado slices in sandwiches. However, I have never had it cooked. Does cooking change the character of the avocado-taste, texture- very much?

  1. beautiful, low carb healthy fat I think food should look as good as it tastes. kids like hole in one or sub bacon if not salmon eaters, easy. Brunch is the best meal of the day!

  1. I live in Japan and quail eggs work well without over filling.
     
  2. For that extra dollop of decadence, top with 1-2 t. salmon roe ("poor man's caviar") and serve creme fraiche or sour cream on the side. NOBODY will want just one, so you'd better double the recipe! 5 stars with tweak, 4 stars without.
