  • Combine everything in a small bowl.
  • Salt and pepper to taste.
  • Spoon into a pita with some lettuce or spinach, onto whole grain bread, or into a wrap.

  1. This recipe made great use of my lonely leftover salmon fillet. I broke it apart, tossed it with the tomato (a whole small Roma), onion, and also a few capers (just sounded good), then whisked the olive oil and mustard together and drizzled it over. This was wonderful in a wrap, and I did enjoy the addition of the capers. Thanks for sharing your friend's recipe!
     
  2. I used a canned salmon from Whole Foods which is very good. Substituted Ikea's mustard and dill sauce for the mustard and salted to taste. Very good. Used in a sprouted whole grain wrap from Angelic baking.
     
  3. This made a very satisfying lunch between slices of whole grain bread. The salmon was canned Alaskan pink salmon. I did use a whole small homegrown tomato and the onions were sliced scallions. Following GaylaJ, I added a few capers to the mix and possibly next time around may try a squeeze of fresh lemon juice. Something I will make again for a lunch on the go.

  5. lovely recipe, very easy to make perfect fr that quick sarnie.. ??I gree with the others and feel thje ddition of capers would give it a bit more of a lift that i think it needed and i will try that next tme. I mitted the tomato as ididnt haveany fresh to hand. Still great though, thanks for sharing

I live in Canada, and I work in the restaurant industry (not a chef!). Don't have a favorite cookbook, but I love these internet sites, (especially this one, where you can get the dietary info - that's cool). I'm pretty passionate about animals, and about my health, (regardless of what my beer and cigarette habit might say about me!). The majority of food I like to eat is vegetarian, if not, vegan. I am able to enjoy a good steak every now and again, however. As long as I don't have to cook it. (I hate cooking meat - makes such a mess...) I have recently had a month off - I took the time to backpack around Mexico by myself. Crazy? Nah. Well, maybe...
