directions

  • Preheat the oven to 350°F
  • Take four salmon fillets (do NOT use salmon steaks!) of about 6-7 oz. each and put them on a cookie sheet that has been sprayed with Pam or brushed with olive oil to prevent sticking.
  • Spoon about 1 tablespoon of Butoni pesto (in the grocery store refrigerated section) onto the top of each filet and spread evenly.
  • Take the pistachios (shell the nuts, put in a baggie and whack with the side of a meat tenderizer/pounder) and cover the pesto with them. The amounts of pesto and pistachios depend on the size of the fillets, so use your judgment here.
  • Bake for about 20-22 minutes until done.
  • Serve immediately. (I serve it with roasted baby red potatoes and asparagus.).

  1. Why can’t I use steak salmon? Mine is a large filet that you cut in portions. Is that a salmon steak?

  2. I'd like to try this recipe. Could I use thawed wild sockeye salmon with skin?

  3. what should be the temperature for the oven

  1. We were SO impressed with this recipe! I was short on time so cooked it at 400F for 15 minutes and covered it in foil so it wouldn't dry out. The pesto went so well with the salmon and the nuts were a nice added texture. This will be a go to recipe for us from now on!

  2. This is so easy and so delicious. I used some homemade pesto and steel head trout instead of the salmon. This is something I will make again for sure. Made for Diabetic Forum and Greens for Spring.

  3. So easy to make & very tasty, love it!!! will do this again & again. Thanks for sharing.

  4. Great recipe! Very flavorful and something we would not have thought of. We used homemade pesto and added the pistachios. We ate this with a side of broccoli.

  5. this is a recipe that my cousin from Argentina gave me and has been a family favorite for years. i use a complete side of salmon and leave it whole and bake it at 350 degrees for 30 minutes. the presentation is glorious. I usually serve it with (5/15/08) some kind of steamed rice and a green salad.

I live in the San Francisco area and love it here. I discovered Recipezaar (then Food.com..Genius Kitchen) in 2001 and have been so happy to have my favorite recipes stored safely here. I am mother to 7 and grandmother to 7. I love to knit, smock, sew, etc., but my favorite hobby of the moment is traditional rug hooking. This is a sample of what I do.? It's called "November".? I dyed most of the wool myself. It is made from wool flannel, cut into strips a little less than 1/4" and then worked into a linen backing. This is my 3rd rug.
