Roasted Parmesan Garlic Cauliflower

- 3 tablespoons fresh minced garlic
- 3 tablespoons olive oil
- 1 head cauliflower, separated in florets
- 1⁄3 cup grated parmesan cheese
- salt and black pepper
- chopped fresh parsley
directions
- Preheat oven to 450 degrees.
- Grease large casserole dish.
- Place olive oil and garlic in large resealable bag.
- Add cauliflower and shake to mix.
- Pour into prepared casserole dish.
- Bake for 20 to 25 minutes, stirring halfway through.
- Top with Parmesan and parsley and broil for 3 to 5 minutes until golden brown.

YAY for such a tasty cauliflower recipe!! This is one I'll be passing on to my family and friends - especially the ones who don't quite believe you can have a meal that is both delicious and healthy. I cut up the cauliflower and put it in a big bowl, then poured the olive oil and 7 cloves of coarsely chopped garlic over top, before mixing it. I set the timer for 15 minutes, stirred, then set it for 10 more and it looked perfect. I didn't have fresh Parmesan, and admittedly used the powdery stuff from the green shaker. After adding that and the fresh parsley, I set the timer for another 5 minutes and let that get crunchy. The final result was soft but not mushy cauliflower with crunchy garlic/cheese mixed in. Yummm!! I will DEFINITELY be making this again.

This was good but my cauliflower didn't get soft in 25 minutes in the oven but was getting really brown. So I dumped it in a microwave bowl and microwaved it for five minutes. I then put it back in the oven and added the rest of the ingredients and broiled. I did use only two tablespoons of garlic and forgot to add the parsley. We enjoyed this.

We recently went to Uno Chicago Grill and one of their side dishes was cauliflower. Our waitress assured us that it will be the best dish that we have ever tasted and it was. She explained that it was cauliflower with garlic butter, pepper and parmesan cheese. So when I looked for a copy here, I thought that this may be close. It was, but I did substitute butter for the olive oil. Thank you for posting - my children told me that this is the only way I am to make cauliflower!
