  • Set oven to 350 degrees.
  • Grease 1 9" x 5" loaf pan.
  • In a bowl, combine rye flour, cornmeal, whole wheat flour, baking powder, baking soda and caraway seeds.
  • In a small bowl, beat eggs, molasses, milk and oil.
  • Pour the wet ingredients over the dry ingredients; stir with a wooden spoon to blend.
  • Pour batter into prepared loaf pan.
  • Sprinkle with sesame seeds.
  • Bake 50-60 minu8tes, or until loaf tests done.
  • Remove bread from pan, cool on wire rack.

  1. This is not pumpernickel but it is a decent brown bread. Pumpernickel has a specific taste and texture and this bread had neither. It has the texture if a typical quick bread. Sort of halfway between cake and bread. Taste wise it tastes like a brown bread but doesn't have the unique twang of pumpernickel. I found it best to eat it cold with butter. So make a good ?? an bread but relabel this. It's not pumpernickel.
     
  2. This was good and reminded me of Anadama bread. This wasn't the earthy pumpernickel I was craving, a bit too sweet for that. Also, I added about 1/2 teaspoon of salt as the batter was bland. A perfectly good quick bread.

  4. I made this easy recipe on impulse and, aside from no caraway seeds in the pantry, I followed the directions! It was cooked in 50 minutes but I'd advise checking after 45 mins. The texture is not like bread, yet its not sweet like cake - "unique" is the word I would use for a description. Thanx Kitten!
     
  5. This is a neat little loaf of bread! Goes together quick, and it comes out nice and light, just like cake! Great plain, or with butter on top! I did omit the caraway and sesame seeds, other than that, followed your easy directions. This'd be a nice take-along to a potluck, too! Thanks for sharing, K ... It's a keeper! Laudee
