Leftover Turkey or Chicken Chili

"This is a white chili, using leftover cooked turkey or chicken, with a nice spicy kick. This is strickly a white chili, no tomatoes, red beans, or chili powder of any kind."

  • Heat the oil in a large saucepan over medium-low heat.
  • Slowly cook and stir the onion until tender.
  • Mix in the garlic, jalapeno, green chile peppers, cumin, oregano and cayenne.
  • Continue to cook and stir the mixture until tender, about 3 minutes.
  • Mix in the chicken broth, turkey or chicken and white beans.
  • Simmer 15 minutes, stirring occasionally.
  • Remove the mixture from heat; slowly stir in the cheese until melted.

  1. Written as is, I can see the problem with the soupiness that people were having. I made a few tweaks and it is awesome. First, I used a fresh jalapeño and sautéed it with the onion. I also added all of the spices (because of the fresh pepper, I used about 1/2 the cayenne) to the sauté and then added some masa flour to the pot to make a roux. That took care of the texture and it became chili-like. I deglazed it with a little more than half of the broth in the recipe and it was a perfect ratio. Then just dumped in everything else and I also had a frozen roasted corn thingy in my freezer so I dumped about half of that in also and that made it perfect. Served with Mexican cheese and flour tortillas on the side.

  2. Had this for lunch today using leftover chicken breast. We liked it. However, the consistency was more like soup, so we added a cornstarch slurry to thicken it up a bit. I used 2 (4 oz) cans of diced green chilies since I didnt have any jalapenos. I think the chili would be improved by adding fresh chopped cilantro. I topped with smoked cheddar cheese. This was certainly fast and easy with minimal prep required. Thanks.
     
  3. This is really good! I used leftover turkey in it. I will make it again, but for our tastes, I will omit the cayenne pepper. It was really spicy for us!!! I added some heavy cream to tone it down a bit. Thanks!
     
  4. This was literally the most delicious recipe I've ever made! I added a bit of corn starch and puréed half a can of beans in their liquid to thicken and about a half cup of corn and it was out of this world! I also only spritzed the pan with oil so it was zero points on WW!
     
  5. HAD THIS LAST NIGHT FOR OUR FAMILY GATHERING. IT WAS A LAST MINUTE CHANGE UP GOOGLED RECIPE USE FOR THE LEFT OVER CHRISTMAS TURKEY.........IT WAS HIT!!! I DOUBLED THE RECIPE AND ONE OF THE CANS OF BEANS I PUT IN THE BLENDER, IT WAS STILL MORE SOUP LIKE. WHICH WAS GREAT BECAUSE IT WAS RAING AND COLD. STILL EXTREMELY TASTY. I HAD TO LINK THE ENTIRE FAMILY THE RECIPE AS WE WERE EATING, BECAUSE EVERYONE WANTED IT!! FROM 2YRS-75YRS, ALL LIPS WERE A SMACKING. THE ENITRE POT WAS GONE!! I ONLY MADE 2 MINOR TWEAKS: I DID NOT ADD THE JALAPENOS OR CHEESE IN THE CHILI, BUT HAD THEM AS TOPPING FOR THOSE THAT WANTED TO ADD THEM INDIVIDUALLY. WE ALSO SERVED THIS WITH GRILLED CHEESE FOR THOSE THAT WANTED THEM. WILL DO THIS AGAIN! IT IS NOW IN OUR WINTER FAMILY GATHERING ROTATION RECIPES! THANKS YOU!

Tweaks

  1. OMTTED THE CHEESE AND JALAPENOS TO BE COOKED IN THE CHiLi, BUT MADE THEM PART OF A TOPPINGS BAR CHOICE.
     
  2. added 1/3 cup white corn.
     
  3. Instead of using canned chillies I used two fresh chopped poblano and two chopped Anaheim peppers, I browned them with the onions, I also cooked for 15 minutes in the pressure cooker.
