Kittencal's Easy Tuna or Chicken Noodle Casserole

"This is a delicious casserole that can be made using either tuna or 1-1/2 cups or more of cooked cubed chicken or even cooked turkey --- for a thinner sauce use 1 cup of milk or half and half instead of 3/4 cup, prep time includes boiling the egg noodles, if you are not a garlic-lover then you may omit the garlic powder and to zing the flavor up even more add in 1-1/2 tablespoons of lemon juice"

  • 6 ounces egg noodles
  • 2 tablespoons butter
  • 1 (10 3/4 ounce) can condensed cream of mushroom soup, undiluted
  • 12 - 1 teaspoon garlic powder (or to taste, I use 1 teaspoon)
  • 3 -4 tablespoons grated parmesan cheese (optional)
  • 34 cup milk (or can use half-and-half cream)
  • 12 cup sour cream (can increase to to 3/4 cup)
  • 14 - 12 teaspoon seasoning salt (or to taste, or use white salt)
  • 12 teaspoon fresh ground black pepper (or to taste)
  • 1 small onion, finely chopped (can use 2 green onions)
  • 14 cup pimiento, chopped
  • 1 small green bell pepper, finely chopped
  • 1 large celery rib, diced
  • 1 (6 1/2 ounce) can tuna, drained and flaked (can add another 3 ounces for a more meatier casserole if desired, or use cooked chicken or turkey)
  • 12 -15 butter flavored crackers, broken in pieces (such as Ritz Crackers)

  • Preheat oven to 375 degrees F.
  • Grease a 2-quart casserole dish.
  • Cook the egg noodles in boiling salted water; drain then toss with 2 tablespoons butter.
  • In a large saucepan, mix the undiluted mushroom soup, garlic powder, Parmesan cheese (if using) milk or half and half, sour cream, salt, pepper, chopped onion, pimiento, bell pepper and celery; cook over low heat, stirring frequently for 15 minutes.
  • Add in the tuna or chicken; mix to combine.
  • Combine the mixture with the cooked egg noodles.
  • Transfer to prepared greased baking dish.
  • Sprinkle top with the broken Ritz crackers.
  • Bake for about 25 minutes.

  1. This was very good. I did not add the Parmesan cheese, pimientos, or green peppers (everything I hate) and it was still very good. I used left over chicken. After simmering the sauce for 15 min. I should have known better than to put it in the oven for another 25 min. By simmering it, it thicken up pretty good and then by baking it, it got extremely dry. Still good mind you but for leftovers I will add more milk. Just adding the hot noodles after simmering would be just right for eating or else not simmering sauce just put in oven for 30 min. I will make again but will adjust the cooking time.
     
  2. This was delicious no suprise with it being Kittencal's recipe.... Instead of piemento and bell pepper I just stirred in a cup and a half of frozen peas and carrots b/c it was what I had on hand. I also used whole wheat macaroni also all I had but the sauce and flavor profile was exactly what I was looking for. Thank You
     
  3. This was very easy and very tasty. I doubled the noodles and used 1 1/2 pounds of cooked chicken. Next time I will be sure to make a little more sauce as it dries out a bit in the oven (when using so many noodles and so much chicken). Very, very yummy. My husband asked if we could have it again this week. Never had a request for the same meal twice in one week before! Thanks for the recipe!
     
  4. This is a delicious, but so quick to make, tuna casserole. I sauteed the celery, onions and used fresh garlic. Also, I grew up on the tuna casserole with peas so I added those. I loved the flavor of the sauce with the soup, sour cream and milk. This is one tasty casserole! I loved it. Thanks for yet another great recipe.
     
  5. Super recipe!!! I added extra mushrooms but did not have the pimiento or celery. It tasted great and the kids loved it. I also used bread crumbs mixed with melted butter and sprinkled on top. A super easy and fast recipe that will be in my meal rotation from now on!!! Thanks Kittencal!!

  1. As I was putting the recipe together I realized to my horrors that I didn't have any soup, so I did what I thought was best and used Alfredo sauce to replace the soup and no pimentos either so used red bell pepper. And no potato chips. So I did my best to duplicate the recipe. it was really delicious and even given the amount of ingredients it was easy to follow and quick as well. Will be making this again and again and with all the ingredients listed.
     
  2. Excellent recipe. I used left over roast chicken and left out the pimiento, green bell pepper and celery (not favorites) and added frozen peas instead. Really good, I'll try it with tuna next time. Thanks for another yummy recipe.
     
  3. My family dislikes casseroles, but liked this recipe. Everyone even had seconds. We used Greek yogurt instead of the sour cream, and substituted mozzarella cheese for the celery and pimento. It was a great way to get rid some shredded chicken before we had our house fumigated.
     
  4. Hey Carol, this is definitely a 5 STAR recipe! My husband and I so enjoyed it. I didn't think this was dry as others have stated, it was very creamy. I did add 1 (12 oz.) can of tuna, plus I added 1 tsp. garlic powder, 3 Tbsp. of parmesan cheese, 3/4 cup of sour cream, 1/2 tsp. each seasoned salt and pepper, and a (2 oz.) jar of pimiento(s). I didn't have any celery or green peppers, so I added about (8 oz.) of slightly cooked peas and carrots, as they were from a frozen bag. I did not add the 2 Tbsp. of butter to the noodles, cause I already added 1 Tbsp. of butter to the boiling water when I cooked the noodles. I topped the casserole with 15 (generic) ritz crackers, and topped the crushed crackers with 2 Tbsp. of melted butter. I think this dish would taste great using other canned soups, such as: cream of chicken with herbs, or cream of chicken and mushroom soup. I plan on substituting other vegetables for the celery and green peppers, such as: either corn or canned mushrooms. Thank you Carol for sharing this recipe. This recipe is definitely a keeper!!
