Girl Scout Chocolate Mint Cookies (Copycat)

"I've never been able to tell the difference between this imposter and the real deal. Easy, Easy, Easy!! I actually overheard this recipe at a meeting when I was working as a journalist. I tried it, and it's a winner! You might be able to get more than 70 cookies out of this recipe."

  • 2 cups mint chocolate chips
  • 70 Ritz crackers

directions

  • Melt the mint chocolate chips in the microwave.
  • Dip crackers, one at a time, into the chocolate.
  • Lay on wax paper to set.
  • Store in airtight container (if there's any left, that is).

  1. These are so easy and good :) For ease of dipping, dip only half of the cracker, shaking off excess chocolate, then put on waxed paper, when set, simply pick up and dip the other half. I don't get so messy that way!

I made these this morning.<br/>I should not have tried one.<br/>I wrapped up the rest as fast as I could as I am giving them in my Christmas Baskets.<br/>I can tell you they taste exactly like the originals.<br/>I can tell you you should not eat one and expect to get away with it.<br/>I could not find mint chocolate chips so I used one bag of chocolate chips, added 1/2 teaspoon pure peppermint extract and melted over a double boiler.<br/>I'm not sure if I should curse you or thank you, however since it's the Christmas Season.........<br/>THANK YOU-amazing recipe!<br/>Di ;-)

  4. If you don't make these cookies, you are nuts! They are the BEST! I made them for my best friend for Christmas and now I have to make her a batch once every month. I pop mine into the freezer for about 4 minutes and they are done! You can make 2 batches in about 1/2 an hour. (I use a pickle tong and a fork to dip and flip onto the wax paper and they turn out great)
     
  5. I read previous reviews before making this. From making this two ways, I learned some lessons the hard way: 2 cups dark chocolate wafers + 2 tsp pepper ment oil worked MUCH better than mint chocolate chips. Don't put them on a rack after dipping. The cookies stick to the rack and break when you try to remove them. It is far better to put them on wax paper after coating. That way, they'll have flat bottoms. Colored sprinkles can be applied while the chocolate is still warm, for a pretty finish. I only got 40 cookies from the 2 cups of wafers. I used metal tongs for dipping. The cookies are easy to make with the wafers, and are very tasty. I plan to make them again next year.
