Easy Peanut Butter Cookies

ingredients
- 1 cup peanut butter
- 1 cup sugar
- 1 egg
directions
- Preheat oven to 350 degrees.
- Combine all ingredients in a bowl.
- Mix until well combined.
- Form into 1" balls.
- Flatten balls with a fork.
- Bake at 350 until golden brown.
- (To make more than 1 run of cookies just double the recipe).

Awesome cookies! I made a small indent in the cookie(used the top of my vanilla bottle) and added a tsp of strawberry preserves. These took about 11min in my oven. You'll want to let them cool before you taste them the jam stays hot for a bit. Yum! Taste just like a PB&J. My DH and boys loved these.

These are the only peanut butter cookies I make anymore. Good with crunchy or creamy peanut butter. I usually do the sugared fork, but sometimes I'll use a glass with a fancy bottom to press a pattern. Eight minutes is perfect in my oven but you have to let them rest a couple of minutes before you take them off the pan.

These cookies rock! I didn't use an egg, but an egg replacer. I used the powdered one because they work best in cookies. I also used almond butter instead of peanut butter and the taste was exceptional. I think this is a great recipe and I'll do this again. Thanks for the simple and wonderful recipe.
