Easy Frozen Chicken Breast

"If you are like me you forget to take out the chicken the night before you want to cook it, this is a great and easy way to cook frozen chicken breast. I have used left over pasta sauce topped with cheese and BBQ sauce with honey and brown sugar added in. Use any sauce you have. The measurements are up to you, I had to put something. You need enough sauce to cover the chicken."

  • Preheat oven to 375.
  • Spray baking dish with non-stick spray.
  • Place frozen chicken breast in dish.
  • Top with sauce.
  • Bake for 45 minutes.
  • Options: Add veggies for a one dish meal.
  • If using cheese, put it on the last 2 minutes of cook time. This gives it time to melt and brown if you like it that way.

  1. Do I put BBQ sauce just on top of the chicken? Or all over the chicken? Do I put veggies on top of the chicken? bottom of the chicken? Mixture of both? Or do I place chicken in top of the veggies?

  1. Come one people! Get real. Every single chicken breast you take out of a frozen bag or package is going to vary in thickness and size. You can cook 6 small thin ones in 30 minutes or 2 huge fat ones in 50 minutes. It all varies in time. This recipe is super easy, fast and tastes really nice. If you're in doubt, stick a thin knife through the thick part and if the juice is not completely clear, cook for 5 or 10 more minutes and try again. If it is clear but you're still not sure, cut that section through and make sure there is zero pink left in the middle.
     
  2. Perfect, cut to the chase! Yes I am like you, love that you did this. And for those worried about covering it or not, take a chill pill and just do it or not. Or just be sensible and cover for the first half and then remove it to crisp for second. Tin foil is a matter of preference.

  4. A for simplicity, F for instructions, as other reviews say 45 min is no where near close enough to cook the chicken breasts, I cut them open at 55 min and still very raw. It takes closer to 80 min, if you eat them after 45 min make sure your health insurance is up to date.
     
  5. I had avoided frozen breasts for years as I had bad results earlier in my adult life when trying to use them. This recipe is almost foolproof and has allowed me to try wide variations that have all turned out well. I tend to avoid heavy sugar sauces like many BBQ sauces but I've tried both bottles spaghetti sauce and other tomato sauces to good results. My fav is a can of chopped tomatoes, garlic, onions, red wine, Italian seasoning, a little honey or brown sugar, a dash of Balsamic, a dash of soy sauce and pour ir over the breast, following the rest of the cooking instructions. I serve with some high protein or veggie pasta and a salad or green veggie and it makes for a delicious, foot-proof entree. I've even done it for company which is a risk!

  1. First preheat oven to 375°. I used ; 3 frozen chicken breasts 1 whole carrot chopped into small cubes 1/2 cup of brown sugar (I used dark, it was great) 1/2 bottle of honey BBQ sauce ( I used Kroger Brand) 1/2 cup onion (I used frozen chopped onions) 1 celery stalk cut into thin slices 1/2 can of sweet yellow corn (extra unused veggie put to excellent use) Or any of your favorite veggies Once veggies were prepared mix together Salt and pepper may be added if desired Cooked covered for 35 minutes Cut open chicken with knife, basted chicken with veggies and drippings in the bottom of pan, plus added additional tablespoon of BBQ sauce per chicken breasts recover and bake for 20 additional minutes then remove lid and broil for 3-5minutes. Family loved it! No leftovers. I did let chicken sit in a pan for about an hour to start the defrosting process. Drain any excess water, then start the preparation steps. Works seemlessly the first time. Next time I will wrap each breast in aluminum foil with ingredients to test. (Less dishes also) This dish was served with cornbread stuffing and seansoned mixed greens chased by an Angry Orchard crisp apple hard cider. :)

  3. I used spaghetti sauce, ketchup, tomato sauce and sliced onions. I like my chicken saucy and only had one jar of spaghetti sauce. I am gluten free so I am thinking cabbage with this meal.
