Crustless Spinach Quiche

1 9inch quiche

ingredients
- 1 tablespoon vegetable oil
- 1 onion, chopped
- 1 (10 ounce) package frozen spinach, thawed
- 5 eggs
- 3⁄4 lb muenster cheese, grated
- salt and pepper
directions
- Preheat oven to 350-degrees F.
- Spray 9-inch pie plate with Pam. (I use a corning ware quiche dish).
- Heat oil in skillet over med. high heat. Add onion and saute until browned (5 min).
- Add spinach; cook until excess moisture evaporates. Let cool.
- Beat eggs in bowl. Add cheese.
- Stir egg-cheese mixture into onion-spinach mixture. Season to taste with salt and pepper, if desired.
- Turn into pie pan, spreading top evenly.
- Bake until top is browned and tester (I use a toothpick) comes out clean, 40-45 minutes.

Very easy, very good taste, I did use fresh spinach and added just a little fine chopped red pepper. I like the color. They had some great fresh looking spinach and peppers at our farmers market so I couldn't pass them up. I followed directions exactly. My only recommendation is that I felt it needed some herbs as I was making it. So, I did add some fresh tarragon and basil. I made it for a friend, but made a small one for me that I had for a late breakfast today. Very nice!<br/><br/>UPDATE: Well, I have made this 3 or 4 times and it is so easy. The last couple of times I used frozen chopped spinach which worked very well. I continue to add a little red pepper diced fine, just for some color, but it also adds a bit of sweet flavor. This last time, I added some all purpose seasoning vs fresh herbs and again, turned out very good. But, I had just a couple of spoons of ricotta leftover so I through that in and WOW, was it good. I topped the quiche with a little grated parm<br/><br/>The best thing is, is that you can really change up the cheese. I have used gruyere, swiss and mozzarella, this time was provolone and mozzarella with the parm on the top. <br/><br/>The recipe is good as is, but I love that you can change it up just a bit each time. diced olives with feta would be great or sundried tomatoes. Ham and mushrooms too. A very good easy recipe.

I diced 4 slices of bacon, lightly fried in cast iron skillet I coated with a little olive oil adding onion just after about 5 minutes. Added a few handfuls of fresh spinach rough chopped, tossed to wilt and cooled in pan about 10 minutes outside in a snow bank. I used 8 eggs and 1/2 cup of light cream added directly to cooled bacon & veggies in skillet and baked as directed. Tasty!

The Spinach I usually ordered was 'substituted' for one with less than I use in my recipes. So, I added about a cup of finely chopped Ham, some fresh Garlic in with the cooking Onions and swapped out the 'Muenster' cheese with a 'Colby, Jack and Cheddar cheese' blend. It ended up being phenomenal. Now I don't know if I want to go back to the original...

<p>I love cooking and trying different foods, but my favorite cookbooks are now Weight Watchers or low fat/low cal cookbooks as I tend to try and make low fat/low cal recipes. I lost over 90 pounds on Weight Watchers and have maintained for over a year now -- so my cooking/eating habits have changed drastically following my weight loss and to keep it off!</p>
