- 8 medium potatoes, cooked and diced
- 1 1⁄2 cups mayonnaise
- 2 tablespoons cider vinegar
- 2 tablespoons sugar
- 1 tablespoon yellow mustard
- 1 teaspoon salt
- 1 teaspoon garlic powder
- 1⁄2 teaspoon pepper
- 2 celery ribs, sliced
- 1 cup onion, minced
- 5 hard-boiled eggs
- paprika
directions
- Boil peeled potatoes in salted water until done. Cool to room temperature.
- Place diced potatoes in large bowl.
- Mix mayonnaise, cider vinegar, sugar, mustard, salt, garlic powder, and pepper in another bowl.
- Add to potatoes.
- Add celery and onions and mix well.
- Stir in eggs.
- Sprinkle a little paprika on top.

When I read this recipe, it didn't sound all that different than any other, but based on a 5 star rating by someone else, I tried it and my company did all but lick the bowl clean when I served it! Be careful with the salt. BE SURE to salt the water when you cook the potatoes! (I notice a lot of recipes don't mention that anymore. A young cook doesn't know to do this). I doubled the amount of salad dressing because (I used more like 10 or 11 potatoes)--but the eggs and it wasn't dry the next day when I served it. GREAT potato salad!

I searched for a potato salad recipe for a little BBQ we were having last weekend. I was a little inundated with all the recipes available, but I'm sure glad I went with this one.I made the salad the day before and just added a little more mayo right before serving. We got lots of comments on it. Thanks for the great recipe!

Classic potato salad.... As my family ( my sister, parents and my fiance) and I ate through the bowl of potato salad with our BBQ'ed chicken and hamburgers, we all smiled. I swear there was a moment when we felt that we were young again back at my parents old house laughing the summer evening away. I love the way a good meal can do that to a person! ***DEEP SIGH***<br/>The potato salad was great. I thank you very much for the recipe!

Only change I made was to do half Mayonnaise and half Miracle Whip and that is ONLY because my son is not a Mayo fan but he loves Miracle Whip so I have to compromise to get him to eat anything with mayo! I know I know! But a mom has to do what a mom has to do sometimes! Anyway love this recipe and other than the Miracle Whip substitution, followed it exactly

This is truly a classic recipe. It is very similar to one I took from the label of a jar of Hellman's Real Mayonnaise. The changes I have made include: Since it is hard to keep celery on hand and many times I cannot find good celery, I have substituted approximately 1 tablespoon on celery seed and we love it. I also use sweet pickle relish and the juice (instead of vinegar since the pickle juice has vinegar in it). I always boil my potatoes in their jackets and peel after they have cooled. I never fai

After DH and I moved away from the farm, and to the city...I haven't done as much cooking and very little canning. But I do come to Zaar and look for new recipes once in a while. I'm still cooking Zaar!!
I like to play at Facebook, with my family and friends. A lot of my Zaar friends are there!! Yay! It's a good way to keep in touch.
We travel more. We're looking at the European trips now. Hope to go in the springtime. I really want to see London, I think I lived there in a past life, I've been obsessed with it since I was 10 years old!!
