Chicken Cordon Bleu Biscuit Casserole

"This is very easy to put together and pretty tasty in my opinion! I came up with it when one night when I thought chicken cordon bleu sounded good, but only had cubed chicken on hand. You can use shredded cheese instead of sliced, add broccoli or more meat, use homemade biscuits... it's pretty forgiving. These are just the ingredients I happened to have on hand that day, but feel free to adjust to suit your tastes."

  • 14 cup butter or 1/4 cup margarine
  • 14 cup flour
  • 14 teaspoon salt
  • 18 teaspoon pepper
  • 1 cup milk
  • 1 12 cups cooked chicken, cubed
  • 12 cup ham, cooked and cubed
  • 4 slices swiss cheese
  • 1 (7 1/2 ounce) can refrigerated biscuits
  • 2 tablespoons melted butter or 2 tablespoons margarine
  • 14 cup Italian breadcrumbs

directions

  • Melt butter in saucepan over low heat and blend in flour, salt,& pepper.
  • Cook over low heat,stirring until mixture is smooth and bubbly.
  • Stir in milk until smooth, let boil for about 1 minute and remove from heat.
  • Add chicken and ham to butter/milk mixture.
  • Spread into an 11x7 pan and cover with sliced cheese.
  • Place biscuits on top (I usually flatten in the palm of my hand so that they fit better and bake faster).
  • Pour melted butter over biscuits and sprinkle with breadcrumbs.
  • Bake at 350 for 15-20 minutes, or until filling is hot and bubbly and biscuits are browned, and enjoy!

  1. i see things that look like carrots and broccoli in some of the photographs. Nothing with those colors is in the recipe. Don't you like it the way you wrote it? You should use pictures of the recipe as written, or add notes to the recipe about what you changed.

  1. This was delicious, with just a few tweaks. For convenience, I used a rotisserie chicken. I added some frozen broccoli and carrots, used crescent roll dough instead of biscuits, and used shredded Swiss. I also added just a touch of Dijon mustard to the sauce- it gave it a little flavor boost. It was a hit at dinner!

Broccoli was another ingredient that I added into this recipe. I scooped the mixture including 3 cups of turkey and 3 cups broccoli florets into a 2-quart square baking dish. Took longer than 20 minutes to cook because I basically double the ingredients and broccoli needed more time to cook through too. Loved the flavor.

Broccoli was another ingredient that I added into this recipe. I scooped the mixture including 3 cups of turkey and 3 cups broccoli florets into a 2-quart square baking dish. Took longer than 20 minutes to cook because I basically double the ingredients and broccoli needed more time to cook through too. Loved the flavor.
     
  2. I have made this recipe 3 times now and it is a hit with my whole family! My father-in-law requested it for his birthday dinner. I've also recommended it to several online friends who all gave it rave reviews. I also used croissants instead of biscuits. A tip: don't roll up the croissants. They won't cook well on the bottom. Just leave them flat.
