Chicken Cordon Bleu Biscuit Casserole

- 1⁄4 cup butter or 1/4 cup margarine
- 1⁄4 cup flour
- 1⁄4 teaspoon salt
- 1⁄8 teaspoon pepper
- 1 cup milk
- 1 1⁄2 cups cooked chicken, cubed
- 1⁄2 cup ham, cooked and cubed
- 4 slices swiss cheese
- 1 (7 1/2 ounce) can refrigerated biscuits
- 2 tablespoons melted butter or 2 tablespoons margarine
- 1⁄4 cup Italian breadcrumbs
directions
- Melt butter in saucepan over low heat and blend in flour, salt,& pepper.
- Cook over low heat,stirring until mixture is smooth and bubbly.
- Stir in milk until smooth, let boil for about 1 minute and remove from heat.
- Add chicken and ham to butter/milk mixture.
- Spread into an 11x7 pan and cover with sliced cheese.
- Place biscuits on top (I usually flatten in the palm of my hand so that they fit better and bake faster).
- Pour melted butter over biscuits and sprinkle with breadcrumbs.
- Bake at 350 for 15-20 minutes, or until filling is hot and bubbly and biscuits are browned, and enjoy!

This was delicious, with just a few tweaks. For convenience, I used a rotisserie chicken. I added some frozen broccoli and carrots, used crescent roll dough instead of biscuits, and used shredded Swiss. I also added just a touch of Dijon mustard to the sauce- it gave it a little flavor boost. It was a hit at dinner!

Great recipe, especially with all the adjustment that I could do with it! I actually had a lot leftover turkey, so instead of using chicken, turkey was my choice. Broccoli was another ingredient that I added into this recipe. I scooped the mixture including 3 cups of turkey and 3 cups broccoli florets into a 2-quart square baking dish. Took longer than 20 minutes to cook because I basically double the ingredients and broccoli needed more time to cook through too. Loved the flavor.

I have made this recipe 3 times now and it is a hit with my whole family! My father-in-law requested it for his birthday dinner. I've also recommended it to several online friends who all gave it rave reviews. I also used croissants instead of biscuits. A tip: don't roll up the croissants. They won't cook well on the bottom. Just leave them flat.
