- Serves:

ingredients
- 1 tablespoon mayonnaise
- 1 tablespoon Tabasco sauce (or an variety)
- 1 tortilla (10 inch)
- 1 lettuce leaf
- 6 slices shaved chicken
directions
- Mix mayo and hot sauce.
- Fill tortilla with sauce, lettuce and chicken.
- Roll to eat.

Louisiana folks love lagniappe, pronounced LAN-yap, meaning a little something extra. Like when a waiter brings you an extra dessert or something and doesn't charge you or, in this case, the extra kick of hot sauce. Well, maybe not so much the hot sauce, but the way it makes bad words roll right off my tongue. Now THAT's lagniappe. Made for PAC Spring 2010.

I made these for my family for a snack during the football game. They like things hot so I used one tablespoon of mayo and two tablespoons of Frank's red hot. I made five wraps. I didn't have lettuce so my youngest heated his up in the microwave. The others added cheese to theirs and heated theirs too. Everyone enjoyed these. I didn't try these because I'm not a fan of buffalo chicken.

I love buffalo chicken wings and this is a fun take on that idea. I sprinkled some blue cheese in the wraps for the grownups. The mayo Franks Hot Sauce was perfect. Ingredients are spot on! I made this recipe on 2/4/10 for two events, " Afternoon Tea and Light Suppers " and for the " 8th Annual Photo Swap ". A couple of changes were made to the recipe and they are as follows, I'm wimp when it comes to hot foods so only two teaspoons of hot sauce was added to the mayo. Since all I had on hand was a bit of bagged salad mix, that was used. The coolness of the salad mix and shaved chicken blended so well with the mayo/hot sauce spread. I will so make this again. There was a question posted in one of the forums about who I would love to have for dinner, right now. I answered God, Jesus, my mom, Grandma Lundin, Grandpa Lundin and Aunt Sig. They are my role models in life. Each has molded me into the person I am now.
My fondest memories are spending Thanksgiving and Christmas-time at my Grandma's house, and the whole family around. SO MUCH good food!
I lived in that small city my whole life and graduated from high school just outside of town. I have a strong restaurant background.. everything from Pizza Hut to a local italian restaurant called Vullo's. It seems, though, I have a passion for machining technology, even though I didn't go to school for that. I grew up with a local manufacturer of machine/tooling systems soldering/wiring circuit bds and assembling whole systems. That wasn't enough for me so, I went to college and obtained my AAS in Electrical Technology. The same company hired me back to work in their service dept as a technician. I had planned to go further to become an electromechanical engineer for the company, but I was laid off. I have been out of it so long, I would probably have to start over from scratch.. .that is the problem with electronics/technology.
