  • Combine 2 tbsp olive oil, balsamic vinegar, sea salt, black pepper, garlic and basil.
  • Add to a large plastic bag with the chicken and marinate for up to 8 hours. I would recommend at least an hour.
  • Before grilling the chicken, combine all of the tomato basil bruschetta ingredients in a medium bowl. (ingredients from the roma tomatoes, down).
  • Place in the refrigerator until ready to serve the bowls.
  • Remove the chicken from the marinade and place on a grill over medium heat for 10-12 minutes per side.
  • While the chicken is grilling, add the remaining 1 tbsp olive oil to a large skillet, then add the zucchini noodles and saute 3-5 minutes.
  • Divide the zucchini noodles between two bowls. Once the chicken is grilled, slice it up and place on top of the zoodles. Spoon the bruschetta over the chicken and zoodles.

  1. Fantastic recipe! The only recommendation I have is to add a little salt to the zoodles. Love the chicken marinade and the bruschetta mixture. I used green onions instead of red onion for a milder taste.

  4. My husband and I LOVED this recipe. He was not initially excited about a uber healthy keto dinner but, we were extremely impressed with it being so fresh tasting and truly delicious. It is now on the list of our top favorite recipes! I may have marinated my chicken a little too long (over 6 hours and it turned the chicken brown) so next time I'll just do an hour or two. The "zoodles" were absoutely perfect with this dish - we were expecting to miss real pasta but did not AT ALL. As a matter of fact, we prefer the zucchini noodles - it was so much more flavorful. We opted to sprinkle the parmesan on the hot grilled chicken breasts and in the zoodles vs. putting it in the bruschetta. You gotta try this!! Fabulous.
     
  5. I don't eat zucchini raw, so how long/how should I prepare the "Zoodles?"
