- 1 cup chopped onion
- 1 cup chopped green pepper
- 1 tablespoon butter
- 1 (28 ounce) can tomatoes, cut up,don't drain
- 1 (4 ounce) can mushroom pieces
- 1 (2 ounce) can sliced ripe olives
- 2 teaspoons oregano
- 1 lb ground beef, brown and drain
- 10 ounces spaghetti, cooked and drained
- 2 cups shredded cheddar cheese
- 1 (10 ounce) can cream of mushroom soup
- 1⁄4 cup water
- 1⁄4 cup grated parmesan cheese
directions
- In lg skillet, saute onion and green pepper in butter.
- Add tomatoes, mushrooms, olives, and oregano.
- Add cooked beef.
- Simmer for 10 minutes.
- Place half of the cooked spaghetti in greased 13x9 baking pan.
- Top with half the meat mix.
- Sprinkle with 1 cup cheddar cheese.
- Repeat layers.
- Mix soup and water until smooth; pour over casserole.
- Sprinkle with parmesan cheese.
- Bake, uncovered, at 350* for 30-35 minutes, until heated through.

Made this with a few changes....I omitted the olives, mushrooms and oregano. I used sweet Italian sausage and Italian blend cheese, also added about 3 minced garlic cloves, I used a strong garlic base sauce and instead of water I used red wine....it was yummy!! I was ordered by my family to make this again!!

This was very good. I did make a large amount of changes, though - some because of personal preference and some because of necessity. My husband doesn't care for spaghetti so I used shell macaroni instead. Also, I discovered I only had a 14 oz. can of diced tomatoes, so I used that and added a 15 oz. can of tomato sauce and a 4 oz. can of tomato paste. I added a small amount of sugar to cut the tomato acidity, and instead of layering this I mixed the macaroni and the meat sauce all together. I didn't use olives as we don't care for them. I sprinkled the top with one layer of cheddar cheese, then topped with the soup and parmesan. Very good, and this will give me lots of leftovers to take to work!

After DH and I moved away from the farm, and to the city...I haven't done as much cooking and very little canning. But I do come to Zaar and look for new recipes once in a while. I'm still cooking Zaar!!
I like to play at Facebook, with my family and friends. A lot of my Zaar friends are there!! Yay! It's a good way to keep in touch.
We travel more. We're looking at the European trips now. Hope to go in the springtime. I really want to see London, I think I lived there in a past life, I've been obsessed with it since I was 10 years old!!
