- 1 lb salmon fillet
- 2 tablespoons mayonnaise
- 1 teaspoon lawry's lemon pepper
- 1 tablespoon parmesan cheese
- 1 cup dry breadcrumbs
directions
- Preheat oven to 350°F.
- Fillet salmon and place skin side down on a glass baking dish.
- Spread a generous amount of mayonnaise; cover entire top of fish.
- Sprinkle liberally with seasoned salt, cheese and dry bread crumbs.
- Bake about 25 to 30 minutes, uncovered.
- Place under broiler until top turns brown.

Wow, this was really good...both Hub & I loved it! I was a bit worried when I read some of the reviews AFTER it was already in the oven but totally happy with outcome. I didn't think mayo was overpowering at all! I had a really nice piece of salmon too and the flavor was only enhanced not lost. I'll def be making again!

This is the first time that I've bothered to write a review - so you know that it's good! I've made this twice now and both my family and guests have loved it. I didn't have lemon pepper so I substituted lemon rind and black pepper. I also substituted a mozzarella/parmesan blend for the parmesan cheese.

What a great recipe to make on a week night! My fiance was hesitant when I suggested making this recipe since he doesn't like it when seafood has a fishy taste, but he liked it! If you don't have seasoned salt on hand or you want to reduce the sodium in the recipe, you can omit it and use italian bread crumbs instead.
