A Really Good Tomato Recipe

ingredients
- 1 (5 ounce) package garlic and cheese flavored croutons
- 2 large tomatoes, cut in 1/4-inch slices
- 1⁄2 lb mozzarella cheese, slices
- 4 tablespoons red wine vinegar
- 1⁄2 teaspoon dried basil
directions
- Line the bottom of a 9-inch pie or quiche pan with a single layer of the croutons.
- Alternate 1/4-inch slices of tomato with mozzarella slices on top of the croutons.
- Sprinkle with the red wine vinegar and then the dried basil.
- Put in a microwave oven for 5-8 minutes or until the cheese has melted.
- Enjoy!

This was great! I came across this just today and had to try it. I didn't have croutons, but I had some leftover uncooked pork stuffing cubes from making meatloaf the other night, so I used them. I also sprinkled the tomatoes with cheddar cheese, and sliced provolone, and balsamic vinegar. I also didn't need to cook this for 5min. It only took 3min for the cheese to melt, and the tomatoes were steaming hot! I'll definitely make again, but with croutons.

I was really surprised at how good this was (even after reading all the reviews). I used my last two tomatoes and some fresh mozzarella over bread (I didn't even break it into cubes) with garlic. I sprinkled with a touch of basalmic (no red wine vinegar) over tomatoes so not to get bread too soft. It was delicious! The melty cheese really gave the bread flavor-even though the bread got a bit soft, edges still had some crunch. Will definitely do this again.

Garden tomatoes are truly pushing the need to find "something new"! Had the reddest, ripest tomatoes and fresh mozzeralla, layered in a small baking dish, over croutons - sprinkled with extra garlic/pepper seasoning. Followed another reviewer's suggestion of using balsamic in place of red wine vinegar, with pleasing results. Topped with chiffonaded fresh basil and nuked for 1 minute periods, 4 times. was a tasty side to left-over chicken pot-pie. Thanks for posting, Lainy.

So I changed this recipe and instead of using croutons I used bacon as my base! The vinegar made the bacon soft (I like my bacon firm, but the other person eating this with me likes their bacon soft). But it was still tasty and I would definitely make it again perhaps with less vinegar. It was quite easy to make and I'll add this to my recipe list. :)

I couldn't find garlic and cheese flavored croutons so I made this recipe with garlic flavored croutons. I used low-fat mozzarella cheese. I'm sure it would have been better with fresh mozzarella. At the last minute, I decided to use balsamic vinegar instead of red wine vinegar. And I used fresh basil and put it in the oven until melted. Thanks Lainey. This is so tasty. The vinegar made the bacon soft (I like my bacon firm, but the other person eating this with me likes their bacon soft). But it was still tasty and I would definitely make it again perhaps with less vinegar. It was quite easy to make and I'll add this to my recipe list. :)

My husband, the tomato eater in our house, loved this recipe. I strayed a little from your exact recipe, using fresh mozarella and adding 1 tablespoon virgin olive oil drizzled over the mix, before I added the RWvinegar. I also used an italian seasoning mix instead of the basil. However, it was a great dish for DH, who suggested I add a little thinly sliced onion next time, and maybe some bread crumbs or something crispy on top. Thanks for the great recipe.

One of my favourite tomato recipes! I make a version of this, but with slightly different seasonings - so I was pleased to try this out! A very nice recipe which we ate with cold meats and French bread yesterday, on a very hot afternoon! I substituted the dried basil for fresh basil, as I have some growing in the garden. Lovely thanks!FT:-)
