  • 1 cup flour (whichever kind you prefer)
  • 1 tablespoon sugar (I used organic cane sugar)
  • 2 tablespoons baking powder
  • 18 teaspoon salt
  • 1 cup soymilk
  • 2 tablespoons vegetable oil

directions

  • Set out all your ingredients.
  • Set a stove element with a pan to medium heat.
  • Combine the 4 dry ingredients (flour, sugar, baking powder -- two Tablespoons, not two Teaspoons as some have suggested, salt) in a bowl.
  • Add the soy milk and vegetable oil to your mixture.
  • Mix until smooth.
  • Now the pan should be ready for your batter, so spoon one pancakes' worth of the mixture into the pan.
  • Flip [carefully] when you see bubbles in the middle of the pancake, or if the edges are looking stiffened.
  • Repeat until the batter is gone, and try not to eat them all while you're cooking them.

  1. These turned out as good or better than most vegan pancake recipes I've tried. I was worried about all that baking powder, but it wasn't detectable to me in the finished product. I used the measurements exactly as written, only I used spelt flour and chocolate soy milk. There were tears over who got the last pancake....so I should have made more! Thanks for sharing, I love the simplicity of this recipe and will be making again soon.
     
  2. So fluffy! I only had a little bit of wheat flour left, so i mostly used regular bread flour. Seriously, who needs eggs anymore at all with recipes like these?
     
  3. These tasted awful, I think because of the baking powder. I wouldn't recommend this recipe. They look really good, but the super sweet homemade jam I put on them didn't cover the bad taste.
     
  4. Excellent pancakes. I'm a new vegetarian (almost a year) and trying to work my way up to vegan. I used unsweetened Almond milk instead of Soy milk. This is the first pancake recipe I've found that was both simple and tasty. I love it!
     
  5. I made these thinking that that much baking powder would have made them nicer, and it did in terms of consistency but the taste was just too bitter. Use LESS BAKING POWDER next time.. I don't know how this recipe can get such good reviews?

Tweaks

  1. switch the amount of baking powder and sugar (2 tbs sugar, 1 tbs baking powder) and tbh the oil is optional. For extra flavor add 1 tsp vanilla extract and/or 1/2 tsp cinnamon.
     
  2. I have just ammended the recipie to state two TEASPOONS, rather than two TABLESPOONS. Whoever changed it to tablespoons was clearly trying to mess with us. Disgraceful. ?:(
     
  3. After making pancakes for my omnivore husband and baby brother the other day, the smell was haunting me. I started craving them which brought me here. I tried this recipe as is, knowing in my heart that it required too much baking powder. I was right. The chemical taste was overpowering. I ended up rinsing the remaining batter down the drain. I tried again but with some changes. Here are the amendments that I made to this recipe in order to make it pleasing to my taste buds. <br/><br/>Instead of 1 Tbs sugar, I used 1 Tbs Organic Raw Agave Nectar<br/>Instead of 2 Tbs baking powder, I used 2 tsp baking powder<br/>Instead of 2 Tbs vegetable oil, I used 2 Tbs Extra Virgin Olive Oil<br/>I also added 1/4 tsp vanilla and 2 tsp flax seed oil<br/><br/>With my amendments, this recipe was great but not perfect. I'll work on it a bit and then post the mastered recipe on this site. <br/><br/>Happy Cookin'
     
  4. ONE tablespoon maybe, if not decreasing it to two TEASPOONS. Dear God. A whole bunch of pancakes wasted. Bitter and couldn't cover up the awful taste with anything. They're beautiful and fluffy though. Just be sure not to make them too thin or they fall apart.
     
  5. Please fix it to 2 teaspoons not 2 table spoons. That’s a HUGE difference and it won’t be so gross and bitter
