  • Preheat oven to 325 degrees.
  • Line cookie sheet with parchment paper. Do not just grease sheet as they will stick. Yes, that is experience. lol.
  • Mix all ingredients together until well combined.
  • Depending on the size you make them, either use a spoon or an ice cream scoop, and place on sheets.
  • Bake for 10 - 12 minutes.
  • When baked, transfer to cooling racks.
  • These freeze wonderfully.

  1. I was conflicted by these. The taste is amazing. I could even eat the batter by itself it's so good. Baking was difficult. I used a cookie scoop and the bottoms would brown and harden but the tops would still be "raw." So the next batch I made them thin and small like cookies and they spread like crazy and were very sticky. Again, taste was great but then they didn't really look like macaroons. It must be something I am doing wrong. They are tasty, but wasn't something I was able to add to my candy/cookie tray.
     
  2. I have to agree with everybody else -- these are wonderful!! Made them for hubby's coworkers and they all wanted the recipe! So simple -- yet so tasty and delicious! I think I'll make them again next week.

  5. Wow! These are EXCELLENT! I found scooping them to be a challenge until I started scooping with a large spoon and using my fingers to slide it onto the cookie sheet. Mine were all about the same size (slightly bigger than 2") and I got 42 out of this recipe. I love the flavour of these. They have a sweet/toasty flavour to them. Perfect. I know that I will be making these again and again. I used low-fat condensed milk to make them a wee bit healthier and it worked perfectly. Thank you so much for posting such a wonderful recipe!

Tweaks

  1. I noticed at the supermarket today that a 14oz package of coconut stated that it contained 5 1/3 cups. I had measured my coconut in a measuring cup and it took more than a 14oz package to make 5 1/3 cups. This may be the problem with those of you who stated that there was liquid running out of the cookies or the cookies were spreading. Also, I found dropping by teaspoon was the easiest way to get them on the parchment. I dropped them about 1" apart and got about 45 macaroons out of the recipe. Please try the recipe again, only this time measure the coconut. I'm pretty sure you will be happy with the results
     
  2. These have to bake for at least 20 minutes. Great recipe and so easy!!

Yikes!! My daughter had fun in PaintShop Pro!! What she can do with a picture. My husband and I live in the "bush" and hour from the closest town. Life here is quiet, yet so much more busy than when we lived in the "city". We grow our own veggies, several kinds of berries, and grow lots of hard neck organic garlic. We have 60 chickens, 4 dogs, 1 cat, 1 bird. Quite the menagerie. I make all my own breads, and sell them (along with the eggs).
