2-Alarm Chili

  • Brown beef in a Dutch oven; drain.
  • Add tomato sauce, 2 cups water, paprika, cumin, onion flakes, garlic salt, chili powder, and ground red pepper.
  • Cover and simmer for 30 minutes, stirring occasionally.
  • Dissolve 2 tablespoons masa into 1/4 cup hot water to make a thick, but flowable mixture.
  • Add masa mixture to chili.
  • Cover and simmer another 15-20 minutes.

Questions & Replies

  1. So how much oregano do you add. 2 Alarm also uses garlic powder not garlic salt. So if you want to use garlic powder instead of garlic salt how much? Then I would need to add table salt. Does the garlic salt replace the table salt in the recipie? Also, my mom (always doubled her recipe) added a 1 quart or 46 ozs of tomato juice (this is for a double recipe. Use half of that if not doubling) when I was growing up and that is how I make it too. I also use 2 cups of water like the recipe calls for or 4 cups of water if I am doubling (which I always do).

  1. This is really great Texas chili (no beans allowed). Years ago we used to buy the Wick Fowler's 2 alarm chili mix and I also measured all the ingredients to re-create it without the mix. At the time, my kids were pretty young, and found it a bit too spicy. This chili has to have spice, but I modified it just a bit and they still love it that way today. I add an extra can of tomato sauce, and cut the chili powder to 1/3 cup, cumin to 1 tsp, cayenne red pepper to 1/2 tsp. Try it either way, you'll like it.

Yours is close, but missing a few of the items that come in the box, namely Oregano and Salt. You also replaced the garlic with garlic salt (which probably explains the lack of salt). Disappointing that it's not a true match for the original, but probably makes a decent chili.
     
  3. I found this chili quite a few months ago and forgot to review it. It was the first chili I've ever made, and I don't see any reason why it shouldn't also be the last. It is quick, easy, spicy enough for my husband, and mild enough for me. With the addition of kidney beans, it makes an excellent meal; and without them, it makes an awesome hot dog/hamburger chili. I am also planning on making as a dip for a baby shower this weekend. And, if I ever find anywhere else to use a chili, this will be it. Needless to say, I really, really like it. Thanks!
     
  4. I have been cooking with Wick Fowler's for some time. Now that I found this recipe, I have tweaked it to my liking. Just a teaspoon or two extra of red pepper(depending on how much beer I have in the fridge). I usually make it and take it to work and share with my coworkers. They love it! My wife and kids aren't so crazy about it though, too spicy for them. Too bad, they don't know what they're missing. Makes the best chili I've ever had. I also like to cup up stew meat instead of using ground beef.
     
  5. We tried this over the weekend and the kids claim it to be the perfect chili dog chili. In other words, they liked it.

  1. The original Wic Fowler 2 alarm was my favorite for making Chili. I always many to measure the little packets but never did. Thanks for doing that! I found your recipe looking for the mix. I did find it on Amazon but the price for 2 boxes of mix is over $10. Ridiculous! The ingredients list from the box adds oregino (not sure how much to add?) as someone has stated. Also the packets included one for salt and one for garlic. I do love this chili! Sometimes I might add ground pork, or ground chicken to the ground beef. All taste good. I do add dark kidney beans, (sorry Texas!), and sometimes spaghetti (Its a Chicago thing!). The purpose of this mix is to do it your way. Dont want it hot, don't add the red pepper. On a low salt diet, don't add the salt! Thats why I always loved this mix! Does anyone know how much oregano to add?
     
  2. We love this recipe, but I substitute 1lbs of lean beef for stew for 1lbs of the ground hamburger and we add some dark red kidney beans
